Damien Brockway brings a culinary perspective that spans the African diaspora, combining Central Texas smoking techniques with West African spices, Southern soul food traditions, and Caribbean influences. His collaboration with Greg Gatlin at Distant Relatives has been one of the most exciting developments in Austin BBQ in recent years. Brockway's approach challenges the notion that Central Texas BBQ must be defined narrowly, while still honoring the fundamental craft of smoke and fire.
Philosophy
BBQ is a global tradition. The smoker doesn't belong to any one culture — it belongs to all of us. We're just connecting the dots between the diaspora.
Technique
Traditional post-oak offset smoking for the primary meats, combined with diaspora-influenced spice rubs, marinades, and side preparations.
